Braised Endives in Orange Butter

  • 6 endives
  • 30 g butter
  • 6 garlic cloves slightly pressed
  • Salt, ground black pepper
Dressing:
  • 50 butter
  • 1 spoon fresh thymine
  • 2 cups freshly squeezed orange juice
  • 2 finely chopped shallots
  • Salt, ground black pepper
  • 6 endives
  • 30 g butter

Dressing:
  • 50 butter

  • 2 cups freshly squeezed orange juice

Method:

Prepare the dressing: boil the orange juice, thymine and shallots and cook until there is a cup full of liquid. Add the butter while stirring until the texture is even. Slive the endives lengthwise, add salt and pepper. Melt the butter in a pan , add the endives and fry until the endives are nicely braised. Move into a heat-proof platter, add the dressing, cover in foil and cook for 10 minutes in a preheated oven at 220▫ Remove the foil and continue cooking for another 10 minutes until the endives are brown. Serve warm with ground salt on top .
