Classic mushroom cream sauce

A recipe for a delicate sauce in a classic Italian style

Ingredients for 3-4 servings:
  • 1 bag of mixed dried mushrooms for pasta
  • 2 shallots
  • 2 cloves of garlic
  • 250 ml of sweet cream
  • tablespoon butter
  • A pinch of nutmeg
  • Salt
  • Black pepper

Method:

Soak the mushroom mixture in hot water for about ½ an hour.

Dice the shallots and garlic thinly and sauté with butter.

Drain and squeeze the water from the mushrooms (save the mushroom liquids).

Finely chop the mushrooms and add to the garlic and shallots, continue to sauté for a few more minutes, add the mushroom liquid without the residue, add the sweet cream, salt, pepper and a pinch of nutmeg and bring to a boil.

Cook over a low flame for 20 minutes or until it has reached the desired thickness.

Pour on top of hot pasta cooked according to the manufacturer’s instructions.
