Shimeji (brown & white):
Featuring long stems and small caps fused at the base, they form magical little clusters. They have a nutty flavor that develops upon cooking, and a firm texture that holds shape even with prolonged cooking. The only difference between the two is color.
King Oyster:
Distinguished by a particularly thick, wide stem and a mild taste. Especially recommended as a meat substitute, and also suitable for grilling.
Shiinoki:
A mushroom similar in shape to shimeji but with a longer stem, adding texture and interest to any dish.
