Ingredients for 4-6 servings:
- 1 package of sugar snap peas
- 2 hearts of lettuce, cleaned and separated into leaves
- 6 small radishes, thinly sliced
- 150 grams of feta cheese, coarsely crumbled
- ¼ cup cranberries
- ¼ cup of halved pecans
For the dressing:
- 1/4 cup balsamic vinegar or apple cider vinegar
- 1/4 cup olive oil
- 1 teaspoon mustard
- 1 teaspoon honey
- 1 clove of garlic, crushed
- Salt and pepper
Method:
Place the salad ingredients in a bowl. Beat the dressing ingredients together in a separate bowl, pour it over the salad, toss lightly and serve immediately.
Alternately you can serve the salad with a lemon and olive dressing: mix ¼ cup lemon juice with ¼ olive oil and season with salt and pepper to taste.
