Fresh sugar snap pea salad

This is a light sweet spring salad containing rich and varied flavors and textures. The taste and texture of the sugar snap pea is very prominent alongside the taste of the salty feta cheese, or the crispy pungent taste of the small radish. It is recommended as a light dinner or as a side dish for lunch.

Ingredients for 4-6 servings:
  • 1 package of sugar snap peas
  • 2 hearts of lettuce, cleaned and separated into leaves
  • 6 small radishes, thinly sliced
  • 150 grams of feta cheese, coarsely crumbled
  • ¼ cup cranberries
  • ¼ cup of halved pecans
For the dressing:
  • 1/4 cup balsamic vinegar or apple cider vinegar
  • 1/4 cup olive oil
  • 1 teaspoon mustard
  • 1 teaspoon honey
  • 1 clove of garlic, crushed
  • Salt and pepper

Method:

Place the salad ingredients in a bowl. Beat the dressing ingredients together in a separate bowl, pour it over the salad, toss lightly and serve immediately.

Alternately you can serve the salad with a lemon and olive dressing: mix ¼ cup lemon juice with ¼ olive oil and season with salt and pepper to taste.
