Ingredients:
- 1 cup black lentils
- 1 package of golden trumpet mushrooms, separated
- 2 tablespoons of oil, olive or other
- 150 Gr g crumbled feta cheese
For seasoning:
- 1 teaspoon curry powder
- 3 cloves of garlic, crushed
- ¼ cup olive oil
- 1/3 cup diced cilantro
- 4 tablespoons diced mint leaves
- Salt and pepper
Method:
Mix the curry, garlic, oil, salt and pepper in a bowl.
Cook the lentils for about 30 minutes until soft, drain, add to the bowl with the curry mixture and stir.
In a hot pan with oil fry the mushrooms for about a minute and add to the lentils.
Add the feta and herbs to the bowl, stir gently and serve.
