Blueberry Muffins

Ingredients:
  • 200 g butter
  • 1 – 1.5 cups sugar
  • 3 Tbsp neutral oil (e.g. canola, safflower etc.)
  • 2 eggs
  • 2 tsp vanilla extract
  • 10 g baking powder
  • 1 flat tsp salt
  • 3 cups white flour
  • 2/3 cup milk
  • 3 packs (3*125 g) partially crushed blueberries
  • 200 g butter

  • 3 cups white flour
  • 2/3 cup milk
  • 3 packs (3*125 g) partially crushed blueberries
Method:
  1. Preheat oven to 200 Deg C.
  2. Place the sugar in a steel bowl. Break and crumble the butter into the sugar with a fork. Mix until creamy. Add the oil and mix.
  3. Crack the eggs into the butter/sugar and mix until thoroughly creamy. Add the vanilla and mix.
  4. In a separate bowl mix the baking powder, salt and flour.
  5. Pour the flour mixture little by little into the butter mixture while mixing and intermittently adding the milk.
  6. Fold the blueberries into the batter
  7. Bake until done- about 20-25 minutes.
