Spicy Omelette with Shitake mushrooms

Ingredients for 3 servings:
  • 1 basket of chopped shiitake mushrooms, stalks removed
  • 2 tablespoon olive oil
  • 2 shallots
  • 2 green onions
  • salt, black pepper
  • 6 eggs
  • 1/2 cup finely grated parmesan cheese
  • 1/4 cup chopped parsley leaves
  • salt, black pepper
  • 1 basket of chopped shiitake mushrooms, stalks removed

Method:
