Rice noodles with Sugar snap peas and meat in an Asian style sauce

Ingredients for 4-6 servings:
  • 1 package (250g) wide rice noodles
  • 1 package of sugar snap peas
  • 2 cups cherry tomatoes, halved
  • 200 grams of ground beef
  • 2 tablespoons of oil
For the sauce:
  • 3 tablespoons fish/soy sauce
  • 6 tablespoons lemon/lime juice
  • 2 cloves of garlic crushed
  • 3 tablespoons of sugar
  • 3 tablespoons of sesame oil

For serving: Chopped cilantro

  • 1 package of sugar snap peas
  • 2 cups cherry tomatoes, halved
  • 200 grams of ground beef
  • 2 tablespoons of oil
For the sauce:
  • 3 tablespoons fish/soy sauce
  • 6 tablespoons lemon/lime juice
  • 2 cloves of garlic crushed
  • 3 tablespoons of sugar
  • 3 tablespoons of sesame oil

For serving: Chopped cilantro

Method:

Mix the sauce ingredients in a bowl.

Blanch the sugar snap peas in boiling water for two minutes, drain and immediately transfer to a bowl with ice water to stop the cooking. Soak for a minute and drain again.

Cook the rice noodles according to the manufacturer’s instructions.

In a hot oiled pan, fry the meat while separating it with a wooden spoon until it gets lighter in color; add the sugar snap peas, tomatoes and  rice noodles. Drizzle the sauce over everything and stir-fry for an additional 1-2 minutes.

Remove from heat, sprinkle with fresh cilantro and serve.

  • Variations:  the ground beef can be replaced with  chicken breast cubes/ cubes of tofu/ cubes of baked or fried eggplant.
