Whole Roast Carrots in Ginger and Silan Marinade

Ingredients:
  • 1 package of carrots
  • 2 tablespoons silan
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • 2-3 cm. fresh ginger
To serve:
  • Toasted sesame seeds
  • Salt
  • Ground black pepper

Method:

Heat the oven to 180°C.

Peel the carrots and leave the ends (for an authentic appearance..)

Prepare the marinade – mix silan, soy sauce and olive oil in a bowl, add the ginger chopped into fine slices and mix well.

Coat the carrots well with the sauce and place in a baking tray with the remaining sauce.  Cover with foil and bake for 30 minutes until softened, basting occasionally. Remove the foil and bake for a further 15 minutes to brown.

Before serving:  baste the carrots, sprinkle with toasted sesame seats, salt and pepper.
